The holidays are upon us, so here’s
a couple of my meals in minutes to keep you and the little
treasures happy.
Nazi trout on a duck mattress
A wonderfully simple dish, and also a cheap
one, given that duck is now in season. Make the duck go nazi
by brunting its underside with a thick spoon. Broil the flesh
in a tumble pan with a sprig of chard, then transfer to a
medium heat grill tray for twelve minutes exactly. Any more
and you’ll fuck it. Form the trout unleavened into a
rough mattress using either a puff-knife or your hand. Once
the duck has clogged, lay it heavily on the trout and garnish
with crushed peas and breadknobs. Serves two adults, or one
fat one.
Clotted Pie
A wonderful pudding treat for the kids. Fold
a pint of young cream into a bowl of chopped walnuts and boil
with lemons. Slide gently into bin.
